  6. After 2 hours, remove the dough from the bowl and divide it into 4 equal portions.

  7. Roll each portion into a ball and place them onto a lightly floured surface.

  8. Cover the dough balls with a damp cloth or plastic wrap and let them rest for another 4-6 hours at room temperature (20-24°C).

  9. After the dough balls have rested, they're ready to be used to make authentic Neapolitan pizza.

Tips:

  • Use Tipo 00 flour if you can find it. It's a finely ground flour that's perfect for making pizza dough. If you can't find it, all-purpose flour will work as well.

  • Use fresh yeast if you can find it. It provides a better flavor and texture to the dough.

  • Don't rush the resting process. Letting the dough rest for at least 6 hours allows the gluten to develop and gives the dough a chewy texture.
